So I took a couple days off of blogging because the weekend was crazy but I am back and joined Menu Plan Monday over at I'm An Organizing Junkie! It's my first time joining the blog, but I have been menu planning for a while!

Monday - Shepard's Pie
Tuesday - Spaghetti, Meat Sauce(grd.beef), mixed veggies
Wednesday - Tuna Casserole
Thursday - Amazing Chicken (i will post the recipe below)
Friday - Pizza and Salad
Saturday - Hamburger Soup
Sunday - 7 Layer Meat Dinner(I will post below)

Amazing Chicken (from The Big Cook)

for 1 meal

2lbs chicken, boneless/skinless breasts, or cubed
1 pkg Onion soup mix
1 tsp paprika
1/4 cup cider vinegar
1/2 cup ketchup
1/4 sugar
1 tbsp lemon juice
1/4 cup vegetable oil (I use olive)
1/4 cup onion (minced)
1/2 cup apricot jam
1 ziploc bag

for 4 Meals use the following:

8lb chicken
4 pkg onion soup mix
1 tbsp paprika
1 cup cider vinegar
2 cups ketchup
1 cup sugar
1/4 cup lemon juice
1 cup vegetable oil
1 cup onion (minced)
2 cups apricot jam
4 ziploc bags.

I also have the recipe for 6 and 8 meals, if you would like them, please let me know:)

1. label bag: Oven - bake uncovered @ 350F for 1 hour
slow cooker - high for 4-6 hours or low for 6 - 8
BBQ - on med/high until meat is white throughout

2. place 2lbs chicken into bag(zipper freezer bag)

3. combine remaining ingredients and pour even amounts into each bag of chicken. Remove excess air and freeze

Hint: for BBQ thaw in fridge for min of 24hours up to a max of 48. Take chicken out of sauce and BBQ. Cook remaining sauce in pot on stove. Bring to boil, stirring constantly then simmer until serving time. You can also baste chicken with cooked sauce on BBQ. Top chicken with sauce for serving.

This recipe is great with rice! Serve with corn and tossed green salad to complete.

Seven Layer Bison Dinner(or whatever grd meat)

1 layer sliced potato
1 layer sliced onion
1/4 cup uncooked rice
1 layer peas
1 layer sliced carrots
1-2 lb ground bison (substitute with grd turkey, beef, lamb, chicken or veggie)
1 can tomato soup, mixed with 1/2 can of milk
salt and pepper, sprinkled on each layer of veggie

Use casserole dish of your choice. The larger the dish, the more veggies and meat you will need

Brown meat. Set aside. Layer in casserole dish in the order given above. Bake at 350F for 2 hours or until veggies are tender. Be sure the casserole does not bake dry or you may need to add more liquid.

Enjoy!
