Menu Plan Monday!


 I am finally back on the ball with menu planning after a couple weeks of being lazy. And wow, did my grocery bill ever take a hit. I cannot believe the difference it makes to menu plan! I saved almost $100 by menu planning this last week!!! Crazy.

Anyway, here is the plan for this week:

Monday - Beefy Rice Casserole (see recipe below, its from "The Big Cook")

Tuesday - Spaghetti with Meatballs

Wednesday - Garlic Sausage, Mashed Potatoes and Mixed Veggies

Thursday - Baked Chicken Breast, Carrots, Potatoes and Onions, tossed with Raspberry Vinegarette Dressing

Friday - Pizza and green salad

Saturday - Crock Pot Minestrone Soup and whole wheat biscuits

Recipe for Beefy Rice Casserole

1.5lb lean ground beef, cooked
1 onion soup mix ( 1pkg or 3 tbsp)
1 can Italian diced tomatoes (28oz)
1.5 cups onion, chopped
1/4 cup chopped green bell pepper
1 tsp chili powder
1 tsp chili sauce
1/4 tsp salt
1/4 tsp pepper

2 large ziploc bags
1 med ziploc bag
1.5 cups rice (brown)

1. Label bag:

Oven - add cooked rice, bake covered at 350 F for 1 hour
Slow Cooker - 5-6 hours on low or 3-4 hours on high, add cooked rice 1/5 hour before serving
Microwave - add cooked rice heat through until peppers are tender

2. combine all ingredients except rice. mix well and divide evenly into bags, remove excess air and seal

3. place 1.5 cup rice into medium bag, seal

4. place sealed bag with beef mixture and sealed bag of rice into larger zip bag to keep meal together. seal bags and freeze.

1 lb raw grd beef equals 2 and 1/3 cups of cooked ground beef.
